Breakfast Hash and Fried Eggs
Breakfast Hash and Eggs is a great way to fuel up for the day! It helps to prep the vegetables the night before if possible, to save on chopping time in the morning.
1-2 potatoes peeled and diced
1 sweet potato peeled and diced
1 small onion diced
1 poblano or jalapeno pepper diced
1 zucchini diced
1-2 cloves garlic diced
1-2 tbs fresh rosemary chopped
Directions: Boil potatoes in a few inches of water to partially cook, drain. Fry the potatoes, onions, peppers, zucchini, garlic and in butter and/or olive oil. Serve with fried eggs cooked to order.
