1 can corn drained
1 can cannelini beans rinsed
1 diced zucchini
1 diced summer squash
1/2 cup pine nuts (or sunflower seeds)
2-3 tbs fresh sage diced
2-3 tbs olive oil
2-3 tbs red wine vinegar
salt and pepper to taste
Mix all of the ingredients together in a bowl and chill for about an hour. Serve over mixed greens, or by itself!
